My mother cooked European recipes that she learned from her mother.
Soup was a daily staple made with cabbage, beets, carrots, onions and garlic, plus beef/or chicken.
We, my sisters and myself, do not recall having any digestion problems at that time.
Cabbage Soup(Kapusta-Ukrainian)
- Add: carrots, celery, onions, 1/2 head of shredded cabbage, and parsley in 6 cups of cold water
- salt, pepper, garlic, caraway seeds, and a bay leaf,
- chicken breast or legs (skinned), or beef bone.
Turn the heat on low and simmer for a couple of hours. If you prefer to have it pureed, pour all the ingredients in a blender.
Eat or drink the juice of this soup whenever you are hungry all day long.
If you leave out the cabbage and use chicken for flavor, you will have a great chicken soup!
For snacks: eat raw carrots, celery, broccoli or cauliflower or other raw vegetable that you prefer.
If eating raw food is too difficult for you to digest, parboil the vegetable(s).

Eliminate Meat While Eating These Foods
Try to eliminate eating meat, if you can. If you must eat meat, or any other protein, do so before 2 pm every day, as it takes 8 hours for your digestive system to properly digest the protein.
Besides eating soup every day, I recommend each morning that you drink hot water combined with a whole or half of freshly squeezed lemon juice along with natural maple syrup or honey.
I recommend that you eliminate coffee, it has too much acid and it leeches all the nutrients from your body.
If you follow this diet plan eating only vegetables, raw or cooked, along with homemade cabbage or beet soup daily for one week, (sipping it cold or warm all day long), you will be amazed how much better you will feel. And it will easily cleanse your digestive system along with your colon.
Even better, follow this plan for a second week. Get creative and have fun using your imagination to make other homemade vegetable soups. Whenever I make a soup, I always add new ingredients.
